Basically it's not bad to have more information available and as a filter option. But, there are many movement options and combinations, among them "new" movement options (like in Mission:ISS or Lone Echo, by "pulling" your body through zero-g, or like "From Other Suns", where you can optionally move in 3rd person view, and then autmatically change back to 1st person view when movement ends.
All these techniques, combinations, optional settings, and maybe new concepts, don't fit well into predefined selection scheme.

Now, adding a new experience: Today, ED was updated to 3.0.5. It was an 18MB patch. It took less than 2 seconds to download and install. The whole "download preparation" and "optimization" step took nearly 10 minutes. 10 minutes for a 1 second download. That's ridiculous.

As much as I'd want to see this, the game's price is made by the publishers, not by the stores. I hardly believe that Oculus has the power to force every of their publishers in such a pricing policy. Some publishers allow you to convert Steam keys to Oculus (well, at least Frontier enables this with Elite:Dangerous, so "some" might be an exaggeration already). This is mainly possible, because Frontier requires you to log with their account before playing Elite Dangerous. By that they ensure you cannot play on a Steam-account and an Occulus-account at the same time.

Right now, I toggle guardian on and off as required. It's in the settings screen. Allowing multiple room setups would we great, anyhow.

I feel your pain. But I believe that users will often simply ignore given information, espesially when it addresses their own inabilities. So I came to another idea right now, let's say as the cream on top of yours: Instead of just giving stars for overall experience, users could review aspects of the game separately (overall, comfort, controls).
